There are times when life throws us a lot, perhaps more than we feel we can handle. We don’t feel prepared, ready (we didn’t know we would need to be) – we’re overwhelmed, confused, or just plain scared. The future is unknown and we feel helpless.
During these times, we turn to those we love for strength and support. We also have no choice but to surrender to whatever is happening and access a source of strength within ourselves that may surprise us. It wells up and emerges in moments when we most need it, because well…we need it.
The hidden gift in these times of struggle, pain, or helplessness is that we are shown parts of ourselves that we wouldn’t otherwise know. These deepest, most vulnerable, unshakable, incredibly brave and true qualities make us an irreplaceable part of the human fabric. A most essential part of our interconnected existence as one big family.
We see, somehow, through the darkness, the light that we must provide for others. And this is because they are also shining their light on us. We have no choice, it’s a requirement and a natural consequence of what’s unfolding.
In these moments, we witness our small place within the bigger story. We’re humbled by the smallness of our place, and also in awe of it’s infinite importance. We rise to meet our higher self, on an occasion and in a way that we never thought we could or would. Because we couldn’t even imagine it.
During times like these, often the last thing on our mind is what we’re going to eat for the next meal or how we should be taking care of ourselves. This recipe is just the thing for such times, when you don’t want to put thought, time or much energy into what you’re putting in your mouth. Yet, you know that eating well will help you to function better, feel okay, and get through.
This salad is my go-to when I can’t think of anything else to eat. It also comes together in 5 minutes flat. Awesome!
Herbaceous Chickpea Salad
2 1/2 cups chickpeas (either from 1 can or pre-soaked and cooked from dried)
3 tbsp. fresh lemon juice
handful fresh dill, chopped
handful fresh chives, chopped
handful fresh basil, chopped
handful fresh mint, chopped
1/4-1/3 cup extra virgin olive oil
sea salt and freshly ground black pepper
1/4 cup sheep’s feta cheese
1 avocado, diced
fresh salad greens, optional
- Place all ingredients except avocado and greens in a large bowl and stir to evenly combine.
- Serve in bowls over fresh greens, and top with avocado. Enjoy!
